White Gourd Soup With Laver And Dry Shrimps
Putonghua : dong gua zi cai tang
Ingredients ( for 4 persons )
White Gourd 400 g Dry Shrimps 30 g Laver some Ginger 3 slices
Yellow Wine 1/2 tbsp Salt 2 tbsp Sesame Oil 1 tbsp Chopped Spring Onion 1 stalk
Steps
1) Peel white gourd and remove seeds, cut into large dices
2) Soak dry shrimps by hot water for 10 minutes
3) Heat pot with approx. 1 liter with diced white gourd in high heat
4) Add dry shrimps, ginger and wine, boil in middle heat for 15 minutes
5) Add salt and stir well, pour into large bowl, add sesame oil
6) Tear laver into small piece, sprinkle on soup together with chopped spring onion
Remark
tbsp – table spoon
If you are a vegetarian, you can use canned button mushrooms to replace dry shrimps
