Stir Fry Shrimps In Longjing Tea
Putonghua : long jing xia ren
Ingredients
Medium Shrimps 400 g Longjing Tea Leaves 75 g
Seasoning
Salt 1/2 tbsp Cornflour 1/2 tbsp Egg White 2 tbsp
Sauce
Longjing Tea 3 tbsp Salt 1/2 tbsp Sugar 1/3 tbsp Cornflour 1/2 tbsp
Steps
1) Put longjing tea leaves into a small glass then washed by boiled water
2) Add boiled water to make densed tea, save 3 tbsp of tea for sauce
3) Heat a pot, pour longjing tea with leave, add shrimps, turn off fire when tea is boiled
4) Cover the lid, soak shrimps until 80~90% cooked and tea cool, shell of, dish up
6) Add seasoning to shell off shrimps, mix and marinate for 15 minutes
7) Heat wok in high heat, with 2 tbsp of oil, stir fry shrimps for 2 minutes
8) Add in sauce and some slices of tea leaves, stir fry and mix well, serve
