Stir Fry Egg With Shredded Bitter Gourd

Putonghua : liang gua cao dan



Ingredients
Small Bitter Gourd  1 pc                   Egg  4 pcs                 Chicken Stock  5 tbsp
Salt  3 tbsp               Sugar  1 tbsp

Steps
1) Wash bitter gourd, cut into 2 halves, remove stalk, seeds stuff, cut into 4 cm thin shredds
2) Whisk egg well, add in chicken stock, stir mix gently well
3) Heat wok with 3 tbsp of oil, stir fry 2 minutes shredded bitter gourd in high heat
4) Add in salt and sugar, stir fry for a while, dish up shredded bitter gourd after turn soft
5) Heat wok with 3 tbsp of oil, mdeium heat, add in whisked egg, stir fry gently
6) While egg turn into half solid, add in fried bitter gourd, keep stir fry gently
7) Tuen into low heat, stir gently and mix well, egg coat to bitter gourd
8) Dish up when egg  almost cooked, still soft and wet, serve


Remark
tbsp – table spoon
Bitter gourd can be boiled to cook insteading step 3, remove bitter, but stir fry is taste better bitter.
Don’t add in any spices like garlic, onion, soy sauce…..keep it fresh and bitter, very good taste.
