Sichuan Supreme Spicy Deep-Fried Chicken Dices

Ingredients
Chicken Small Size 1 pc Dry Small Red Pepper 32-40 pcs Cayenne Pepper 5 tbsp
Freash Red Spicy Pepper 5 pcs Ginger 15 small slices Galice 20 slices
Seasoning
Light Soy Sauce 2 tbsp Dark Soy Sauce 1 tbsp Cornflour 3 tbsp
White Pepper 1/2 tbsp Salt 1 tbsp Shaoxing Wine 3 tbsp
Sauce
Water 2 tbsp Red Pepper Oil 5 tbsp Cayenne Pepper Oil 3 tbsp
Shaoxing Wine 1 tbsp Light Soy Sauce 1 tbsp Cornflour 1 tbsp Salt 1 tbsp
Steps
1) Wash and clean chicken, remove head, neck and claw, chop into small bite-size dices
2) Marinate chicken dices by seasoning, for 3 hours, deep fry until crispy and golden, drain up
3) Heat wok with 3 tbsp of oil in high heat, add in sliced garlic, then cayenne pepper, stir fry
4) Grasp break dry red pepper, shredded ginger into tiny pins, add in wok, stir fry
5) Chopped fresh red pepper into small dices, add in wok together with deep fried chicken
6) Add in sauce, stir fry 3 minutes to mix well, dish up to serve while sauce become dry
Remark
tbsp – table spoon
This recipe in Sichuan style, very spicy hot, heavy tasty, but good.
