We named these Shanghai Style, cos these are so common in Eastern China, especially in Shanghai.
Perhaps you can find some difference taste in Beijing, Shanxi, Sichuan….with same kind noodle (normal size and string size, or sometimes made as ribbon flat ), well, it’s no suprise cos these noodle will be made all over the China, by same way and same starch.
