Braised E-fu Noodle With Mushroom And Eggplant
Putonhua : zha gu yi mien
Ingredients (for one person)
Dry E-fu Noodle (small) 2 pcs Assorted fresh Mushroom 200 g
Fresh small Eggplant 1 pc 3-4 pcs Chive 100g
Sauce
Oyster Sauce 3 tbsp Light Soy Sauce 1 tbsp Dark Soy Sauce 1 tbsp
Sugar 2 tbsp Water 250 ml Sesame Oil 1/2 tbsp
Steps
1) Wash mushrooms and eggplant, then shred into short stalks
2) Wash Chive, cut inro short stalks, dish up all sliced and cut ingredients
3) Heat wok with 3 tbsp of oil, stil fry chive and mushrooms, dish up
4) Heat woh with water, parboil E-fu noodle until soft, drain up
5) Heat wok with sauce, add in shredded eggplant, cook until soft
6) Add in E-fu, stir fry until sauce become 80% dry, add in mushroom
6) Stir fry and braised well, dish up when sauce totally dry, serve
