Stir Fried Pig Liver With Chive

Ingredients
Fresh Pig Liver 150g Green Chive 250 g Ginger 5 small slices
Seasoning
Pepper Powder some Light Soy Sauce 1 tbsp Cornflour 2 tbsp Oil 1 tbsp
Sauce
Salt 1 tbsp Sugar 1/2 tbsp Light Soy Sauce 1 tbsp Shaoxing Wine 3 tbsp
Pepper Powder & Sesame Oil some Cornflour 1 tbsp Water 2 tbsp
Steps
1) Rush wash the pig liver, then slice into thin medium pieces
2) Marine liver with seasoning for 10 minutes, cut the green chive into short stalks
9) Heat wok with 2 tbsp of oil, add in green chive stalks, stir fry few seconds, dish up
11) Heat wok with 2 tbsp of oil, add in the ginger for a while
12) Add in pig liver slices, stir fry for few seconds, then pour in sauce, stir fry
13) Add in green chive stalks, stir fry gently until sauce really dry, dish up
Remark
tbsp – table spoon
Fresh pig liver is not easy to buy, may be available in China Town
If you like hot spicy, you can add minced garlic, minced dark beancurd, shredded red and green chili.
