Beancurd With Crab Ovary
Putonghua : xe huang dou fu
Ingredients
Soft Beancurd 4 pcs Large Green Crab 1 pc Chicken Stock 200 ml Spring Onion 1 stalk
Seasoning
Salt 2 tbsp Pepper powder some Red Vinegar 1 tbsp
Solution
Cornflour 3 tbsp Water 3 tbsp
Steps
1) Wash the green crab fully, steam until fully cooked, shell-off the crab fully
2) Take all meat and ovary as it cool, remove cartilage from crab meat
3) Cut the beancurd into medium cubes, then put in a flat-bottom container
4) Pour in very hot water slowly fully cover the beancurd, soak for 15 minutes
5) Drain out water, cut beancurd into small dices and place into a clay pot
6) Heat wok with 1/2 tbsp of oil, add chicken stock and seasoning
7) Add the crab meat and ovary, stir well until boil, then cornflour solution
8) Pour the crab meat solution on the beancurd dices, sprinkle spring onion, serve
