Fried Snakehead Fish With Bean Paste
Putonghua : dou jiang jian wu tou
Ingredients
Snakehead 1 pc 500 g Red Pepper 2 pcs Ginger 2 slices Mashed Garlic 1 tbsp
Spring Onion 2 stalks Parsley 1 stalk Chaozhou Bean Paste 2 tbsp
Sauce
Light Soy Sauce 1 tbsp Sugar 1 tbsp Pepper Powder 1/2 tbsp
Chicken Stock 150 ml Sesame Oil some Shaoxing Wine 2 tbsp
Steps
1) Clean and cut fish into 2 halves, marinated 30 minutes by 1/2 tbsp of salt and pepper powder
2) Ccoat some cornflour on the surface of fish, heat wok with 3 tbsp of oil, fry fish in low heat
3) Dish up fish when fish is fried into golden of both sizes
4) Heat wok again with 1 tbsp of oil, add in ginger and garlic, add in bean paste
5) Add in sauce, then add in fried fish when sauce is boiled, cook for 1 minute
6) Dish up fish, left sauce, sprinkle shredded spring onion and red pepper
7) Pour in fish sauce onto fish, serve
