Stir Fry Sliced Fat-Lean Pork In Shanghai Style

Ingredients
Fat-lean Pork  400 g                   Red Pepper 1 pc               Dry Doufu  2 pcs
Cabbage  5-7 pcs            Spring Onion  1 stalk          Garlic  2 pcs

Sauce
Red Chili Bean Sauce  3 tbsp                Dark Soy Sauce  1 tbsp           Black Rice Vinegar  1/3 tbsp
Salt  1/2 tbsp                  Sugar  1/2 tbsp              Yellow Wine  1/3 tbsp            Water  1 tbsp

Steps
1) Wash pork, boil whole piece for 15 minutes in middle heat, drain then let it cool
2) Slice pork into thin pieces approx. a namecard size, remove seeds of pepper then chop slices
3) Slice garlic and chop spring onion into shorts, chop cabbage same size to sliced pork, slice dry doufu
4) Heat wok with 2 tbsp of oil, add in pepper and cabbage slices, then doufu, stir fry for 2 minutes
5) Dish up stir dried ingredients, heat wok with 1 tbsp, 
add in sliced pork into low heat wok
6) Fry both size of sliced pork until a little crispy, add in garlic and spring onion
7) Stir fry for few seconds, then add in fried all ingredients, stir fry and mix well

8) Turn into high heat, add in sauce then stir fry well for 1 minutes, dish up and serve
