Steam Minced Pork With Dry Octopus
Putonghua : Chang yu zeng rou beng
Ingredients
Minced Fat-lean Pork 250 g Dry Octopus 80 g Dry Black Mushroom 2-3 pcs
Seasoning
Light Soy Sauce 1 tbsp Oyster Sauce 1 tbsp Dark Soy Sauce 1/3 tbsp
Chicken Powder 1/3 tbsp Sugar 1/2 tbsp Pepper Powder some
Salt 1/3 tbsp Sesame Oil some
Steps
1) Soak dry octopus 2 hours until soft, wash to remove dirt skin and its eye, chop into tiny dices
2) Soak dry black mushroom by hot water 3 hours until totally soft, remove stalk, chop into tiny dices
3) Pour all dices into big container, add in minced pork, add in seasoning, stir and mix by hand
4) Marinate minced-mixed pork for 30 minutes, pour pork dough onto a chopping block
5) Chop the pork dought by a chopper, re-covering and chopping for 5 minutes, mix all well
6) Place the chopped-mixed minced pork onto a flat dish or container, flatten the dough
7) Put into a steam case and steam in middle heat for 10 minutes, serve together with rice
8) Option : steam minced pork with dry salt fish …..
9) Option : steam minced pork with preserved salty egg yolk …..
10) Option : steam minced pork with Chinese preserved dry sausage….
Other options : —- Potherb dry-sweety-salty cabbage, sweetcorn and carot, lotus root, minced shrimps………
Remarks
tbsp – table spoon
To flatten the minced pork on step 6th, using your fingers but not any tools like spoon….
